The word’s root is the French word ‘desservir’ which means ‘to clear the table.’ Basically, this was used to refer to clearing the dinner table of all of the main dishes in preparation for the dessert dish to arrive.
The earliest reference to dessert is traced to the 1600s and emerged when people started to serve meals in courses. Each course was enjoyed, but the so-called ‘icing on the cake’ was the dessert – the final meal that everyone awaited with great anticipation.
Typically, the French always served dessert with a sweet wine to compliment the taste and flavor. The sugar and honey trade helped push the idea of dessert even further as the wealthy scrambled to obtain the sweeteners. Common and poor people relied on nature’s sweet treats such as berries and other fruits to make jams, jellies, and pies.
