Sufganiyot are deep-fried donuts, filled with jelly or custard, and topped with powdered sugar.
They’re one of the traditional oil-based foods that Jews eat during Hanukkah (the other popular one being potato latkes). These foods represent the miracle of the Maccabees’s low oil supply that was meant to last for one day, but miraculously lasted for eight.
